Sangiovese

       Sangiovese is a wine that many people tend to overlook, but here at Agua Dulce Vineyards, it is one of our top sellers.  It is one of the most popular Italian grape varieties.  So, it is no surprise that it pairs best with a tomato based Italian dish.  The high acidity in both the Sangiovese and the tomato make a perfect pair.

       When looking for a simple pairing for Sangiovese that doesn't require any preparation, we suggest green olives stuffed with almonds.  The high fat content of the almond compliments the Sangiovese quite well.  If you're looking for a cheese pairing, Parmigiano-Reggiano works well, or you can choose any other goat's milk based cheese.  If you're looking to give your guests a little more, the classic meatballs and marinara always does the trick.  For the chef in you, here is one of our favorite recipes:

Tomato Bruschetta

Ingredients:
3 large tomatoes
4 cloves garlic, minced,
6 black olives, minced
1/2 Spanish onion, diced
1/4 cup balsamic vinegar
1/3 cup olive oil
1 teaspoon chopped fresh basil, or 1/2 teaspoon dried basil
salt & freshly ground black pepper, to taste
6 large slices good-quality French bread

Directions:
Cut the tomatoes into 1/4 inch squares. In a medium bowl, combine the diced tomatoes, half the garlic, the olives and onion and toss together well. In a small bowl, combine the vinegar, olive oil and basil. Add to the tomato mixture and toss together well. Season to taste with salt and pepper. Toast the bread slices until golden brown. Spread the remaining garlic on the toasted bread slices. Spoon the tomato mixture onto the slices and serve. 6 servings.
