Merlot

       Merlot is another grape varietal that is widely grown throughout California.  It is a distant cousin of Cabernet Sauvignon that is naturally low in acid and tannins, making it a very smooth and drinkable wine.  When Pairing Merlot, it is important to stay with earthy, hearty dishes, such as ones that are sautéed, baked or roasted.  Lighter dishes (especially fish) will clash with the bolder, more earthy flavors of Merlot.

       When looking to pair Merlot with cheese, aged Jack, aged Cheddar, or aged Asiago are great choices.  A great finger food to serve with Merlot is mini hamburgers, topped with mushrooms and aged Jack cheese.  If you're looking for a great, hearty dinner, have a look at this great crock pot recipe:

Easy Pot Roast

1 (5  lb) beef roast 
2  large onions, sliced 
2  tablespoons minced fresh garlic
1 (1 1/4  ounce) package au jus mix 
1 (1  ounce) package dried Italian seasoning 
2  teaspoons black pepper
1 (12  ounce) can tomato juice 
3  cups baby carrots  
3-4  medium potatoes

Place onions and garlic in the bottom of the crock pot, then place the roast on top of them.
Place the carrots and potatoes around the roast.
In a bowl whisk together the tomato juice with both packages of seasonings and black pepper (may be slightly lumpy)
Pour the mixture over the roast and veggies.
Cook on LOW for 8-12 hours or on HIGH for about 4-1/2 hours.
